  1. Washing eggs destroys the natural protection called the bloom that naturally keeps out bacteria.
    When you wash it off bacteria can seep through the pores.
    Unless they are soiled you should avoid washing them.

  2. Buy a silicone pastry brush so you never have those bristles from your old fashioned pastry brush falling into the food like you would
    in your YouTube video..
    I also put olive oil spray into my extra virgin olive oil spray bottle, and use that to spray the olive oil on to the spring form pan, the

    fillo sheets, and I also give a nice spray to the top crust so it will brown nicely in the oven.
    I also score the spanalopita filo sheets before placing it into the oven, so it is easier to cut and serve after baking it.

  4. I know this is for spinach pie, but could you tell me how do you store the Greek cheese in the fridge? With bribe or just as is on the plate?

  5. I never had a springform pan, nor did I have patience for making little triangles. So, I put my Austrian influence to good use and rolled up the filling to make strudels. I brushed butter both on the leaves and on top of the roll. I've also seen the filling lightly packed into a springform pan and oiled ribbons of phyllo dough generously placed on top.

  8. I most certainly did NOT enjoy this recipe. It borders on inedible. Are you insane, putting olive oil on fillo dough? It would be understandable if you were trying to make it vegan, but since it has eggs and feta in it, that clearly is not the motivation. It is just horrendous tasting. As you likely know, almost all olive oil in the U.S. is rancid. The fillo dough in this recipe absorbed the horrible, rancid flavor of the olive oil, and it was greasy. A meal to which I was looking forward was totally spoiled. Any moron knows that you need to use butter on fillo dough, for flavor and consistency. I had looked forward to cooking other recipes in your book. I am now planning on throwing the book away.

  9. I’d love to watch this but 15 minutes is too long. Jamie Oliver did something similar in 5 minutes. Can’t stand him but watched it on mute with subtitles.

  10. I make my own filo pastry ,that’s the whole idea , this one everyone can do it ,or just buy the frozen one ☝️
