I don’t say this lightly, this might be the greatest omelette of all time, not only because of its flavor, but because it solves one of my biggest issues with omelettes, a lack of texture. After finishing The Bear a few weeks ago, I finally gave it a whirl. I admit, I didn't have Boursin, but I did have cream cheese and some feta, which I missed together to make my filling. I made the omelet (with a lot less salt than this version), topped with chives and sour cream and onion potato chips and dug in. I have to admit, it didn't pop like I had hoped. The omelet was delicious, but the chips felt out of place, not so much the texture (obviously, the point of the dish), but the artificial flavor does tend to kill the subtle buttery flavor of the omelet, and let's be honest, the buttery eggs is why the French Omelet is one of the greatest things anyone can make.

3 Eggs
11 potato chips
4” of cheese
1 Tbs chives
2 cups of salt
Chips on the omelette? just make a normal omelette and eat it with bread ffs

i just dont see the point of using sour cream and onion chips, when you are already using that creamy cheese and real green onions. Seems like the completely artifical flavoring of the sour cream and onion chips would overpower the actual creamy cheese and chives.
naaah, not for me… I like my salt pure and not flavoured with egg… 😂 seriously, man, why that gigantonormous amount of salt??

We made this last weekend and it was really good. BUT it definitely isn't something I could eat everyday. The garlic is a lot.
Don't care for the recipe necessarily because i'm not a fan of sour cream and onion BUT this was definitely the best omelette instruction. Well done sir, as always.

I just made this for lunch and it is glorious. I used an 8.5" pan and a special omelette spatula and followed your instructions. I reduced the heat on my electric stove as soon as the egg started to set. And I used sour cream and onion chips. Seriously. Such a delicious lunch. I didn't want it to end.
