Sauerkraut and Smoked Sausage with Potatoes & Apples
Sauerkraut had never been one of my favorite dishes growing up. But as I have gotten older, I have come to like and appreciate the benefits of it. Especially when making my own and having all those probiotics to help with gut health. I put this dish together for New Years day and it turned out very good. I know it won’t be an only New Years day dish. This one will go into my menu of dishes to make quite often. Let me know what y’all think of my version. Have a great day.

Ingredients:
1 package of smoked sausage
Olive oil
1 tablespoon butter
1 onion cut in 1/2 inch moons
2 apples sliced about 1 inch thick
2-3 red potatoes (can use russet if you want)
1 quart Sauerkraut
1 cup apple juice
1/4 cup brown sugar
salt/pepper to taste
Put the olive oil in medium high heated pan.
Slice sausage in 1/2 – 1 inch thick pieces and place in oil to brown.
Remove from pan and set aside.
Add the onions to the pan and brown 2-3 minutes
Now add the apples and potatoes and cook for a couple minutes
Add the sour kraut apple juice and brown sugar. Cover and let simmer for 20 minutes covered.
Uncover and nestle the sausages into the kraut.
Cook uncovered an additional 20 minutes or until the liquid is absorbed and the potatoes are tender.
Salt and pepper to taste.

This looks so good! I usually just throw my sausage, onion and shredded cabbage in a pan and fry it up. Really looking forward to your homesteading venture; wish you all the best with the new adventure!
Looks scrumptious! I have also done this with pork chops, pork roast, different sausages have even used mashed potatoes instead of chopping them. Love it, especially with the apples. Thanks for sharing. Happy New Year!

Like your recipe, I never tried it with apples and apple juice. I will make it like that sometime. Looks good! I learned this trick from my Mom, I RINSE the sauerkraut in a large fine seive before I add it with the kolbassi or smoked sausage…..Yum! Rinsing the Sauerkraut gets rid of some of the tartness and sourness…I'm from Pennsylvania Dutch ( Amish ) country. Sauerkraut, potatoes, onions, and smoked sausages ( Kolbassi ) are popular here. I am sure they cook with apples and apple juice with their Kraut….😊👍 Yum!

Only store bought Kraut we buy now is Aldi's Bavarian style, it doesn't have that super strong tartness that other brands have. Their red cabbage and apples is good too. Apparently this dish is actually a German NYE dinner, or with a pork roast. I didn't know till a few weeks ago. I like putting a little German mustard in ours. So yummy.
Are you going to be close to your mother when you move to Tennessee? Only reason I was wondering I could not believe you had waited 7 years to see your mama and I hope you'll be closer to her that shocked me at Christmas.
Thank you so much for replying right back to me she is so sweet I love watching her and y'all seem so close I'm so happy to know that I'm in my 70s myself and if I didn't see my children at least four times a year I don't know what I would do they all live a good ways from me but I just wanted to know y'all seem so close I'm happy to know that this dish is wonderful my husband is going to love it I've never seen it cook like that.

Using the apple juice and apple wedges sounds like a delicious way to add an interesting flavor and texture to a Sauerkraut recipe. A great way to Sweeten the Pot a little bit 😉! Thanks for sharing.

Try one 12 oz bet instead of apple juice. I love it but I also use bratwurst in my recipe.

I love sauerkraut and sausage since a kid, but I absolutely would have to cut those spots out of the potatoes! Might cook soon! Good for colon too!
