PSA: the remains of the deboned chicken may be used to make chicken broth. Just place in pot and add water until chicken is covered. Simmer for an hour or so.
I just learned this and have done it and made chicken and dumplings with it! So good!

Thank you, looks great! I have a Costco chicken and thought of rolling up enchiladas but this looks great and easier! I don't have sour cream but will use yogurt and maybe add some refried beans too. Why not? Thanks again.

Where is the link to your taco seasoning? I searched your blog page and other recipes come up but none for the seasoning.
This is a wonderful recipe! The link isn't working so here is a quick written recap on her recipe:
* = my own additions
2/3 cups shredded rotisserie chicken
1 onion diced
12 Torillas-white
Taco seasoning
1 cup Sour cream
28 oz las palmas green chile sauce
Canned Green chiles*
3 cups mexican blend cheese
Mexican real cheese*
JalapeΓ±os*
Salsa*
oven to 350.
-Sautee onion with oil
torillas cut into 8ths (pizza style).Β
-Add chicken with onion.
-Add 3 tbs of taco seasoning. Add 1/4 cup water.
-mix sour cream and enchilada sauce in bowl. Whisk.
-Add green chiles*
-9×13 casserole dish
-Spray bottom of dish.
-Cover bottom with enchilada sauce mixture
-take corn torillas and lay on bottom covering the dish. Lay onto of each other is okay.
-add half of chicken on torillas. Spread evenly
-pour half of enchilada sauce onto chicken, spread evenly
-Add 1 1/2 cheese on top. Spread
-layer of torillas, covering cheese
-chicken on torillas
-rest of sauce on top (amd sides).
-1 1/2 cup cheese on top
-25-30 mins in oven
Update: made this a couple weeks ago (used red sauce) and it was SO GOOD. Dan smoked us a chicken for Easter dinner, so I'm going to use the leftovers for another one of your Enchilada Casseroles this weekend. Using 'Green' sauce this time. Thanks for all your great recipes!!!
As many times that I have made this, I love the idea of cutting the corn tortillas into wedges. It sure beats having to cut up a tortilla round so you can serve it. Thanks for the great suggestion!

Thanks for this simple recipe to follow! My family loved it and I made it twice in a week! I added green olives, red bell peppers in the chicken and topped with green onion πafter cheese before I put it in the oven. It was so good, delish, thank you for sharing the recipe πβ€
