What is this usually!? It’s so black, it seems like more than just the blackened roasting of tomato’s or peppers…how to get it so black?

    Dried chili peppers , ancho, pasilla, negro

    There’s a whole bunch of dried chili pepper types, each lend a very distinct flavor so I can’t ID from a photo

    That’s probably a Salsa Negra

    Ahh so nothing fresh then. Just well-softened darker dried chiles. And water and some vinegar probably.
