Soo, my pepper harvest is done and I have 8+ gallon bags filled with habaneros, sugar rush and jalapenos and Serranos. I already made green and red salsa, cowboy candy, pepper jelly. What else can I make? Both pressure canning and water bath canning recipes welcome! I plan to dehydrate some of them as well to make pepper powder. (Outside this time so I don’t kill myself via home made pepper spray 😜).

Just plane, canning, in vinegar. Bit of spices…
I just did a whole bag of jalapeño like that. Delicious. Not too strong
I highly recommend [Pepper Jelly](https://www.ballmasonjars.com/blog?cid=pepper-jelly-recipe). It is so yummy on crackers or a bagel with cream cheese. You can substitute any kind of peppers for the bell peppers or jalapeños if you want to change the heat level.
Edit to add: I just reread your post and you already made pepper jelly. Sorry lol!
Go check out r/fermentedhotsauce
I just pickled a bunch of mine. A few years ago I dehydrated some and made habañero salt then used that on steaks or whatever and also on my homemade bacon!
Dehydrate some minced ones too. Great for when you only need/want a small amount of peppers.
If you aren’t ready for fermented hot sauce, healthycanning and nchfp have some non-fermented hot sauces.
