I vacuum sealed these chunks of brick cheese about a year ago.

I no longer have the original expiry date but it’s gotta be long past.

Are these safe to eat? Or toss and repurchase?

    It should be safe but what tends to happen to cheese even when it’s vacuum sealed, the texture may be more soft. Difficult to cut into. Let us know how it is once you’ve cut into it

    I would open one up and give it a sniff. If it doesn’t smell off then give it a small (like 1 cc) taste. If it smells and tastes ok, go ahead and eat the entire block in one sitting and give us a report!

    I would suspect it’s ok given the vacuum seal and refrigeration, but I’m not a food scientist.

    I intentionally buy cheeses close to their expiration date as they taste the best (for me, like stronger sharper cheeses).
    I then split them, sometimes smoke them, and wait years more to eat them.
    Can recommend.

    Yeah, smell it to see if it’s off. But looks good.

    Looks fine to me. Lots of cheeses are aged. You just did it yourself.

    My Chef at a previous kitchen said vacuum-sealing cheese was a surefire way to produce botulism. I’m neither a Chef nor an expert, so take that as you will

    Vaccum packed hard cheese will last pretty much for ever if the seal is intact.

    I routinely let cheeses age for a year or more before enjoying them!
