  1. too many flavours Chef John, it doesn't need oregano, rosemary or clove, it probably doesn't need tomato or garlic either

  2. But the root end was in the ground. It's covered in dirt and bird piss. Think I'd prefer a separated shallot to dirt in my meal. Same with the outer layer that's touched the skin. No way it's going in my pot because it's touched the ground.

  3. As far as the shallots not searing because of contact, I give them a gentle mash with a jar to flatten just enough to have two sides!!

  4. Cincinnati chili has cinnamon in it, must be from stifado, because the orig chili parlors were owned by Greeks.

  5. I have been making beef bourguignon for years using frozen pearl onions for years. It never occurred to me to use shallots, which is so frustrating because I always have them in the fridge. Thanks for the recipe and idea.

  6. Dude, I am so hooked on this stew, I just finished making it for the THIRD TIME, and it never ceases to amaze! The house smells so good while cooking this, it drives my husband crazy. I can't thank you enough! Plus, another recipe where I get to drink wine while I cook. LOL!

  9. Regarding the shallots, even at the price Walmart sells them for, by the pound the meat is cheaper. I do love them, but rarely buy them. Right now shallots at Walmart are 82 cents an ounce. (about $2.47 for 3oz package) or ($13/lb) I just got chuck roast elsewhere today at $5.99/lb. Given that price, go get an onion and spend the 72 cents a can for Walmart brand broth. And, by the way, if you grow rosemary in zone 4 or colder and don't harvest it all, just put it on the porch in winter. Harvest at will. Freezes nicely out there.
