  2. These American Pie crusts are horrible and always end up cooking unevenly. You have pieces of burnt pockets like on a pizza.

    Please just use 2 parts flour to 1 part butter. So much butter ruins the pie.

  3. Tapioca in this pie, BA used corn starch in theirs in the video they published last week.

    I'd really like to see a Kenji video on the comparison of corn starch and tapioca, as it relates to the tightening of the filling in pies like this.

  12. I make the best blueberry pie by using only the wild blueberries that I pick the same day. I do not use the tasteless watery cultivated variety. There is nothing better than wild blueberries for blueberry pie in my humble opinion! Corriander in this recipe? HMMM?? Okay, whatever. Thanks for the video!
