Okay…so I made this today and wow…was the best ziti we ever had. I have a feeling the mascarpone cheese helped it be creamy and rich and not dry in any way. Nor was it too clumpy cheesy, just perfect. I never would have thought of adding that myself. Had to put under broiler for some reason to get the topping to be dry though a few minutes at the end. I've tried five recipes so far and all were great. Next I'm gonna try that olive oil. Can't wait for it to arrive. 🙂

I'm assuming that you always have the marinara or spaghetti sauce already made up and just add the meat when you want it? I feel that ground sausage and beef add heaven to baked ziti.

For those who need this written out, you’re welcome:
6 cups of sauce
1lb of Ziti
3 cups of mozarella (fresh he said with water)
32oz (3.5 cups of ricotta cheese) strained (add sugar to taste)
1-1.5 cups of pecorino romano cheese
1-1.5 cups Parmesan regionno cheese
8oz mascarpone cheese
1/2 cup bread crumbs
4 tablespoons melted butter
Ground pepper
Vito and Joes olive oil
Bring water to rapid boil.
Add tablespoon of Pink Saltper 1 liter of water
Add about a tsp of breadcrumbs to water
Stir immediately throughout until al dente (about 10 minutes)
When done, transfer to bowl that has around 2-3 tablespoons of olive oil.
Mix
Add a dash of salt and quite a bit of cracked black pepper (1 – 1.5 teaspoon)
Stir well
Add Parmesan cheese (hold back some).
Add Pecorino cheese (hold back some).
Add Mozarella (hold back 1.4 of it)
Put all ricotta cheese in
Put all mascarpone in
Give it a good stir to blend
Prep oven to 350
Put 1/2 sauce in the bottom of baking pan and even out.
Gently put pasta right on top. Layer it almost like lasagna.
Spread even
Take a ladle or 2 of sauce and top/spread it across.
Put in oven for around 15-20 minutes
Add remaining cheeses together in a bowl
Give it a good stir.
Add bread crumbs and butter. Mix well and set aside.
Open oven, evenly spread mixture on top. Put back in oven for 15-20 minutes
I have one in the oven right now…if I could roll around in it, I so totally would. 🍅🍅🍅🧄🧄
