    That’s too rare for safety if that’s what you’re asking.

    Way way waaayyyy below the recommended temp for ground beef, which for restaurants is 155 degrees F for 15 seconds.

    Yep, too rare. You unfortunately cannot apply the same “doneness” logic you apply for steak than for ground beef since harmful bacterias like e.coli or salmonella is carried on the outside of the meat.
    So for regular steaks, it’s fine to eat it rare as long as theres a good sear on the outside: the bacterias cannot travel inside the meat.
    For minced meat, since the meat has been, well, minced, the harmful bacterias are able to find themselves “inside” the meatball or patty you’re eating. So no bueno.

    Note: this only applies to beef. Pork and poultry behave in different ways. Don’t eat medium rare chicken brother.

  8. Looks very rare, and this is generally only safe if the beef is freshly ground, which it’s very likely not.

    If you ground the meat, or know where it came from, it’s fine. If not, it could contain lots of bad stuff. Med rare is fine because the internal temp is a bit higher but still could cause foodborne illness

  10. For me it would need to be cooked just a touch more in a blazing hot skillet. That nutty and caramelized flavor you get from searing a burger takes it to a whole other level of flavor.
