Hello, and welcome to Nest & Nature! In this video, we are sharing our special vegan Mediterranean Potato Salad recipe with all of you. This is the perfect year-round side dish that could be served warm or cold; either way, it’s delicious! This potato salad has features some Mediterranean-inspired flavors such as briny capers and olives, pickled onions, and a tangy olive oil dressing. Whether you’re vegan or not, you’re sure to enjoy this. Here’s what you’ll need:

Ingredients for Potato Salad:
3 pounds potatoes
1/2 cup pickled (or non-pickled) red onion
1 bell pepper
1/4 cup Kalamata olives
3 tbsp fresh dill
1/4 cup capers

Ingredients for Olive Oil Dressing:
1/4 cup olive oil
2 tsp dijon mustard
2 tsp white vinegar or red wine vinegar
1 tbsp garlic (minced / powdered)
1 tsp paprika
1 tsp parsley
salt & pepper to taste

  2. I am going to have to try this… One question though.. Why not cut the potatoes before you boil them? They will cook faster, and you can cut them to be about the same size so they will cook evenly?
