When I was in Korea, there was almost always cabbage with dressing that looked perhaps yogurt based and was so delicious at the university’s dining hall. It was sometimes creamy yellow, pale green or even pink in color and I am desperate to know what it is or how to make it-

Mayo + sugar + vinegar.
Salad dressing comes in different flavors (there are a few dressing brands such as 한끼스토리 that sell strawberry dressing, yuja dressing, Cajun dressing, onion dressing, etc. in bulk) and/or sauce combinations. One of the easiest/most common varieties is “keyonnaise,” which is basically 1 part ketchup and 1 part mayonnaise, mixed until fully incorporated and pale orange in color. Pale green could be flavored/colored with a mixture of kiwi dressing, and so on.
It’s similar to thousand island dressing if you don’t wanna make your own
