I just got your cookbook the other day, and though I'm not a fan of fish tacos, flipping to the next page and seeing the instructions for how to make tortillas was a godsend. as a person who spends far too much money on tortillas, this is just excellent. Not only do I appreciate the recipes, but, I appreciate that they're broken into their constituent parts. This way I can mix and match various parts of your recipes with other recipes, and get much better food from much simpler, and better ingredients. I'm looking forward to having better tortillas for my recipes, and spending far less on them at the same time. As an aspiring home-chef, I appreciate all you do.

  4. No, Andrew… UNDER RIPE tomatillos can be toxic. If the papery husk covering is dry, it's probably safe. There's nothing like the sour taste of a tomatillo to spark the flavor in a dish!
