I reverse seared one the other day. It ended up being largely gristle. My dog ate well though.

You get maybe 3 nice sized ones from the whole chuck roll. They are great. Beefy without the excessive chew most chuck gives you.
Get into the other peice from the chuck roll for Denver or boneless short rib. Currently my favorite.
To get these cheap, buy the whole chuck roll and break down yourself. Pull the good parts for steak, a few roasts, then grind. So much value.

Sous vide for 3 hrs then seared her up on the grill was okay. Can’t complain

I’ve been thinking about trying a chuck eye but every time I do, I remember how much trimming I do for beef stew and how long it cooks to get tender.
I picked up one (Choice) last week and the Denver steak looks like a NY strip and the eye was well marbled. Couldn’t decide on what to do, so I froze it and still thinking about which way to go, stew or steak.
