This Crunchy Edamame Salad is packed with protein! Top it off with a garlic peanut butter dressing, yum!💆🏼‍♀️ Happy weekend!

Ingredients (4 servings)
0.5 cup uncooked quinoa
1.5 cup edamame beans
1.5 cups finely chopped red cabbage
0.5 cup chopped cilantro
2 cups finely chopped kale
1 cup chopped scallions
0.25 cup chopped roasted cashews

Dressing
3 tbsp peanut butter
2 tbsp white wine vinegar
2 tbsp agave syrup
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp minced ginger
2 garlic cloves
2-4 tbsp water to thin

Instructions:
1. Cook quinoa according to package instructions.
2. Finely chop red cabbage, kale, scallions, cilantro and cashews.
3. Roast your cashews in a skillet until golden.
4. Make the dressing by mincing the garlic and ginger. Now mix all ingredients listed under “dressing” in a bowl.
5. Assemble the salad, top with dressing and enjoy!
