Bravo to Italians for respecting corn as fit for human consumption, not just as hog feed. And bravo to you for flavoring the polenta. Nearly all recipes cook only water and cornmeal together which turns out bland as can be. I've also seen an alternate oven method that supposedly avoids the endless stovetop stirring. Have you tried this?

I like to add Roman Pan fried Lamb…but with a Pomodoro is excellent…but as a kid firming it up in the fridge and slice it up…serve it up with syrup and it hit the spot too.

Polenta is what you make of it and you can use grits to do the same thing, I use the cooking recipe on the box or bag and add my own stuff to it, the last batch I made, I used butter left over Italian sausage and pork from our last Spaghetti meal, mixed some sauce chopped up the sausage in large pieces , cooked the polenta and then added the meat and sauce to taste, mixed it together and you have a meal. good peasant food. cheap also.

You said olive oil and pink salt were part of the ingredients you used. I do not see you using any olive oil and the salt that you put in the pot looks white not Himalayan. Of all the polenta recipes I have seen there is never any mention of adding olive oil.

Try using a silicone whisk , since I started using it I never have to worry about lumps and it doesn't burn .
