Full recipe
Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill

Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.

Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)

Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.

  4. Thank you for uploading this video, it has some good ideas and inspired me to think of more uses of cucumbers for healthy snacks. I'm a beginner at this and am learning what food devices I should invest in to make more interesting foods and save time preparing the ingredients. When I tried two of these with just having a knife and peeler I realized that these took me much longer to make than anticipated. I was at a BBQ Party yesterday and was making them there and it was taking very long to make them and one of my friends noted that it looked tedious. I was also dealing with using Tillamook Cream Cheese which had a very thick/sticky consistency, but the night before after trying the first recipe, I found I could add some cranberry juice to the cream cheese to make it less like caulking. The trick being to gradually add (a fluid) to the mix until I got to a workable paste that did not cling to the spoon. This is coming from a beginner who is wanting to learn to make a variety of healthier meals for myself and to bring to pot-lucks. I did order an all-in-one grater/mandolin/dicer (I only used a peeler and knife) so that should save time the next time I revisit this. My take-away was also to make these the night before as they should last for an event the next day. Have a good day, Mia Ve.
