    I’d ask your boss to buy em cooked and peeled by the bucket. Individually the cooked and peeled eggs are a bit more expensive, but only as long as you don’t factor in the electricity/gas, the water and the labour time to get to the done product.

    I usually do 12 in about 10 minutes so…2.5 hours? Do I get to watch youtube while I peel?

  3. I used to do this every day working at a Ramen house. 180 eggs, sometimes 360. 180 would take me about an hour.

    If you can open up at least 4-5 a minute chef will stay off your ass lol

    Real question: 150 total or have 150 that are perfect? Some days for me those are two very different questions.

    1-2 days? At 3-4 eggs a minute I’d get this done in 30-35 minutes Probably

    2-4? It’ll take me 35 minutes to peel the 120 eggs that will not fall apart from me looking at them

    I wouldn’t.. If I needed 150 eggs boiled eggs I am just ordering them in. People hate it, but you’d never notice the difference.

    Used to work with a guy that did some time. He worked in the kitchen while serving. In the kitchen they boiled a couple hundred eggs a day. He swore by the method of boiling, icing immediately after, and oiling up his hands (gloves) to make the peel slippery enough to get under the membrane cleanly.

    Long enough that I would order them already peeled and use the labor for something else more important.

    I can never get my hard boiled eggs peel-able; I always end up taking chunks of egg with me. I feel like I’ve tried all sorts of methods but can’t nail it – any tips?

    At my ramen shop we do 180 soft boiled every day. Takes my prep guy about an hour.

    I average 8 eggs a minute so assuming they’re all ready to peel less than half an hour with the clean up time.

    Am a ramen chef so I’ve peeled thousands upon thousands upon thousands.

    The amount of time it takes me to peel 300 eggs. The shells always stick to the egg for me and I have to throw it in the compost.

  20. So here’s how I boil them… boiling water.drop eggs.. bring to a boil and I do about 5 minutes. Turn off, cover and let set for another 8 minutes or so…then shock with plenty of ice…

    They usually come right off 95% of the time. Sometimes I lose track of time, or it’s the eggs themselves when they don’t peel well. Don’t pick at em, I use both thumbs and first fingers to press on it lightly while rolling in my fingers.

    That depends entirely if I’m being paid hourly or salary.

    Could take an hour, could take a few days….
