Made a lower calorie version of one of my favorites that turned out amazing. I ended up going back for seconds and it still fit into my 1500 cal diet.
For the Chimichangas-
I shredded up a Rotisserie chicken and added all the ingredients together in a pan(except the cheese), and simmered it down for about 15 minutes, then cooled it down. Once cooled, I folded in the shredded cheese and wrapped it up in a tortilla. This made 4 servings.
For the cheese-
I blended the cottage cheese until smooth and added it into a pan with the water and chicken base. Once Hester, I folded in the American and Mexican cheese blend. I ended up making a corn starch slurry and adding it until it reached the desired consistency.
