so i just got this from walmart and ive purchased it many times before and it always overflows and bubbles over, however it didn’t this time there was no action. so i was wondering if thats a sign that its bad? or not packaged correctly?

    My guess: it’s fresher. As it ferments, more pressure will build up.

  3. Good for you, most people would have the opposite inclination regarding fizzing jarred food. *IYKYK!!*

    P.S. It should be fine. I always buy kimchi that does not bubble over when opened.

    Don’t refrigerate it yet, put the jar in a bowl for a day or 2 so it can ferment longer.

    You don’t even need to refrigerate it it’s pickled just like sourkraut and .. pickles.

  6. If the weather is cold, your kimchi will not ferment. It’s a good sign.

    Kimchi ferments, making air bubbles, much faster in warmer weather (esp in direct sunlight). Sometimes, if you make the kimchi hot in a weird way, your kimchi can go bad bc it ferments funky. You can still consume it, but it won’t be that good. This usually happens when you add a lot of direct sunlight to kimchi.

    The safest way to ferment kimchi, is slowly in a cool dark place.

    I’d say it’s fine if it doesn’t smell or taste weird.

    Fermentation can be an ingredient to gimchi but its not an essential ingredient to gimchi. Gimchi itself is a word for many different types of prepared vegitables, not just napa cabbage in a red pepper flake slurry.

    If it tastes good then its fine.
