    Looks fantastic!!

    I got into making these guys after watching Alex the French Cooking Guy on YouTube do a series on them. I make them with green onions, a tiny bit of boursin, a mature white cheddar, and finally sliced ham. Well worth the effort.

    Also a sauce whisk helped me get my eggs to the right consistency.

    Dont get me wrong the technique looks perfect, but I cant get over the color. I tend to eat spanish omelette and that is a much more intense yellow, guess its what im used to.

    does it taste undercooked is the question I always wonder. I see these and they look like raw scrambled eggs to me. how do they actually taste?

    Some white spots probably needed to be scrambled a little more but great technique and nice and creamy.

    I went to petit trois and got the omlette just like this and it was heavenly. I’m sure yours was great.

  14. It’s called baveuse. Frankly it needs cooked. I dont get people’s love of slimey things.
