  1. Joel, another great inventive recipe.i will admit that avocados are not a big part of my diet, and have never really used them other than for guacamole. I will give this a shot, my wife will like it, i'll have to see if i do. You are truly from french heritage my friend ,even though you are in Aussie land, but i love rich food. I think you know i am Irish and we are not really known for our cuisine, but i always felt if you can learn many french techniques you can cook any ethnic cuisine. I have to be honest and say that french food is the best in the world.

  7. Hey Joel, four years later I tried this recipe and my family was delighted. It was the first time we had warm avocado. Clever twist chef. I allowed myself a little deviation so I added 50 ml of New Zealand Chardonnay to the bechamel sauce. Mmmm.
