I make this eggplant chickpea stew recipe every week ! tasty and easy vegan recipe
This vegan recipe has impresed everyone because it is very tasty and delicious. I didn’t eaten before such a delicious vegan recipe full of protein. I hope you will try this delicious eggplant chickpea stew recipe. And if you don’t have a lot of time to boil the chickpea you can use canned chickpea too.

INGREDIENTS:
For the chickpea
– 1/2 tsp baking soda
– 1 litre of water
– 250 g chickpea
Soak the chickpea in the water for 8-10 hours!
– 1- 2 litre of water
– 1 onion
– 1 Laurel leaf
– The soaked chickpea
Simmer for about 50 minutes- The chickpea has to be tender!

For the eggplants:
1 kg of eggplants
-1 litre of water
– 1 tsp salt
Soak the eggplants in the salted water for about 10 minutes!
– 20 g of olive oil
Bake the eggplants – grill function for 5 minutes!

For the tomato sauce:
-20 ml olive oil
– 1 chopped onion
– clove of garlic
– 500 ml tomato juice
– allspice
– salt and pepper
