Kecheri Qoroot (Shola) is one of my favourite Afghan dish. It is sticky rice with mung beans and the stickiness depends on how much water has been used to make the dish. In this recipe i have used two type of rice (White & Brown). Afghans usually make this dish with only white rice. Brown rice is one of the healthiest foods, it has high fiber and it helps with digestion.
It is better to serve this dish while it is warm, because after few hours the rice become more sticky and hard and that is because the rice keep absorbing the starchy water.
This dish is also perfect for the little ones at home 🙂
Chakkah / Qoroot / or Kashk is made from dried qoroot (strained yogurt). In Afghanistan you can find lots of shops which sell ready made Qoroort and they send to other parts of the world. If you don’t want to use Qoroort you can just use plain greek yogurt.
You can also make this dish without kufta meatballs. once the rice is ready pour good amount of yogurt, warm Olive oil / Ghee and dried mint on top and serve it like that, it is sooooo yoummy.
