  1. Love the video, Babish! Great stuff as always!

Also, I don't know who needs to hear this, but "authentic" food is a scam, I say. Food is food. The names we give to it are just moderately useful fictions. Until there is a food Pope who has divine food authority, every piece of food is as "authentic" as any other as far as I'm concerned.

Case and point, if someone asked for an "authentic" BBQ sauce, what would you give them? You'd have to ask a million more questions to determine what they meant, and a different person than you would probably give entirely different answers, because of course they would, because they're all subjective. We stick that label on sauces that are so different that someone who'd never heard the term would probably call them entirely different things. Heck, how are "authentic" fries cut? Shoestring? Crinkle? Waffle? Curly? Steak? Wedge? "Normal?" It's all just subjective.

So you folks enjoy the food you enjoy! There's no need for us to talk each other up and down for what we like and find tasty.

  2. As a California Mexican from the city with the best Mexican food there is… San Diego. Im offended by both those salsas 🤣🤣 Also you’re missing sour cream. Otherwise I can dig it!

  3. to me the most controversial was the seed oil. man use olive oil.
