Turkish meatball soup (sulu köfte) is an easy to make comfort food you’ll find in Turkey. I’ll show you how to make my mother-in-law’s recipe, step by step, and also show what we served as sides to accompany this classic Turkish dish. It’s an easy recipe with simple ingredients that are enhanced by a variety of spices. Meatballs
(Although the video shows the recipe doubled, I’ve given instructions for the regular amount below)
1 lb ground beef
1/4 cup fine bulgur
1 1/2 tsp red pepper
1/2 tsp black pepper
1 1/2 tsp salt
*Combine all ingredients together by hand until well combined. Roll mixture into small balls about the size of a marble/fingertip. Lightly dust the meatballs with flour as you go to prevent them from sticking to each other.
Soup
2 – small onions (1 medium), finely chopped
1/4 cup oil
2 tsp salt
1 heaping tbsp tomato paste and/or red pepper paste
5 cups water
Meatballs
2 – 15.5 oz cans chickpeas (garbanzo beans) OR 1 cup dried chickpeas, pressure cooked
1 tsp chili pepper flakes
2 tsp dried basil
In a large stock pot, sauté onions, oil and salt. Add, tomato paste/pepper paste and stir well. Add water and meatballs and let simmer for about 10 minutes to begin cooking the meatballs. Next add chickpeas, chili pepper flakes, and dried basil. Continue cooking soup on stove on low-medium heat for a total of 30-45 minutes, until meatballs are cooked completely. Enjoy!
***The meatballs freeze wonderfully and can be made in advance.
