  1. It's not things that happen that make it better, it's things that don't happen. When you use a mortar and pestle the greens don't oxidize as quickly, and they retain their fresh flavor and color.

    Chef Johns, don’t know if you will get to read this, and sorry to point it out, but this is not Salsa Verde rather some variation of Chimichurri, an awesome Argentine meat sauce. I liked your variation very much!

    Salsa verde has (raw) tomatillos, onions and green peppers (such as Serrano, Jalapeño or De Árbol). If you would like I can share a recipe for real salsa verde.

  7. I think this gets way to salty with salt in the garlic and the anchovies. But usally i like you recepies.
