Not sure in Northern Italy we would ever have such carbonara. Maybe this is a specific restaurant exception more than a style. The chives on top really do not make it look Italian. Where did you get that? What is on top? Prosciutto crudo?

Carbonara is Carbonara everywhere in Italy. The only possible variations are with Pancetta instead of Guanciale. That’s it. And no green chives on it thanks
