I made this using Miller Lane Foods vegan feta cheese.

Makes 8 pieces

Here’s what I used:
▪️1 box frozen filo pastry, thawed
▪️100g vegan feta cheese
▪️100g baby spinach
▪️2 cloves garlic, minced
▪️1 tbsp evoo for cooking spinach
▪️Extra oil for brushing or you can use melted vegan butter/spread or plant milk.
▪️Salt & pepper

1️⃣ Place the box of frozen filo pastry in the fridge overnight to thaw or leave out at room temperature for a few hours before using.
2️⃣ Heat the oil in a pan on a medium heat. Add the chopped garlic, stir and cook for 30 seconds to a minute until fragrant. Add spinach and cook for approx 2 minutes or until wilted.
3️⃣ Season with a pinch of salt & pepper, mix and remove from heat.
4️⃣ Pre-heat oven to 180°C. Prepare the feta by crumbling into small pieces.
5️⃣ Grease the bottom of the baking tray or tin you’re using. Add a layer of filo pastry and brush with oil. Add a small layer of cheese and spinach.
6️⃣ Add second layer of pastry, brush with oil, add a layer of cheese and spinach. Repeat this step until you use up the cheese and spinach.
7️⃣ Cut into squares. Brush the top layer with melted butter. Bake for 30 minutes and enjoy!

  1. In my country filo pastry is usually found in frozen condition. Can I make this delicious recipe of yours and freeze the börek after its cooked and cooled down?
