This is the way I do it too, you can also added some slice of carrots and potatoes before you put the fish and I usually leave the olives until the last 10 minutes that they will not shrink. my favorite is Fish Tagine, It is also same way but it test yummy and you must cook it under low heat if you want to keep your Tagine for longtime otherways they break with high heat.
