With all the heavy cream and cheese filled dishes we get to eat on Keto sometimes you just want a salad. Something that’s fresh, light and still hits all the spots (and fits your macros). This Greek Salad is perfect and it’s super easy to make. Sure it’s got a few more carbs in it than most Keto people like but these are carbs from vegetables and not really the same as eating a candy bar. Show me one person who got fat eating a cucumber? Anyway I’d say forget the Keto police and enjoy this salad. If you’re low carb that’s even better because there is no police involved. Anyway cheers & keep cooking!!

Cesar salad … it’s all about the dressing but it lends itself well to adding grilled meats.
The only Greek restaurant in town closed during Covid 🙁 I miss the Greek salad the most

for the dressing…
DRIED oregano is a must. Thyme is not a valid substitute.
Lemon juice > red wine vinegar. All day, every day.
Garlic Salt > regular salt. It needs that bit of garlic to it as well.
lastly, crumble up some of the feta and incorporate it into the dressing before whipping it together with a fork – and if you want it "creamy" style, then you can just add some greek yogurt to the dressing and it will mix beautifully.
For the actual salad – Bell peppers are out of place here. You can do just tomatoes, cucumber, onion, cheese and olives and it's wonderful – or you could add bulk without really adding calories by using spring mix or romain. Pepperoncini is a nice garnish.
Something for when you don’t want a heavy meal or it’s just too hot to cook.
Tip… take it to the next level and add roughly chopped fresh mint leaves… amazing!

Oregano does not grow everywhere in Greece, especially on a lot of islands. Therefore, thyme is fine, and is actually my prefered herb, fresh of either is rarely used, dry is more convenient and has much more aroma (I'm obviously talking here for wild plants if you can't get your hands on them, you will have to make do with the homegrown, but even the best organic will hardly have 10% of the aroma of the real thing).
You don't have to use vinegar at all (but some people love it). If you are served the salad at a restaurant it will never have vinegar in it.
Parsley and spearmint are excellent to add. Lettuce is not (it is excellent, but is not a greek salad anymore).
Capers and fermented or pickled cucumber are excellent too. If you find yourself at a place where capers grow a lot, you will almost always get them in your greek salad.
Rocket is a great addition too.
Now there is another great addition, that many greeks absolutely love, but I cannot find a name in English. It grows just next to the roots of tomatoes or eggplants, and it's called glystrida, it's a soft, juicy plant that you eat the whole of it.
Didn’t try my first salad until I was 19 at a business lunch at a Greek restaurant. Greek salad by far the most superior and is the reason I now eat salads. I’ve always been so picky but it’s really opened up my options.

Your Greek salad looks fabulous, Sahil! In our area of western NY many "Greek" restaurants serve an open face chicken souvlaki. The marinated grilled chicken breast portion comes cut in several 1 inch wide strips served atop a large Greek salad and toasted pita bread (which I offer to a bread-eating tablemate) and tzatziki sauce.
Two of my other most favorite salads are taboulleh (made with riced cauliflower, rather than cooked cracked wheat) and Salad Nicoise (for which I skip the boiled potatoes and sometimes replace with steamed cauliflower).
