I’ve seen it at a couple of food trucks around town, this one specifically is from el pollo Rico. I’m obsessed with it and would like to find a dupe recipe or does anyone know where I can buy it in bulk

    Salsa Doña. There are many recipes on line and it’s pretty easy to make and so good.

    Jalapeno pureed with garlic, onion, lime juice and salt, emulsified by slowly adding oil to the mix to make it creamy. Commonly called “creamy green sauce” or “Salsa Doña”.   3. Mexican meat markets always sell this by the pint for about $5-$7. It will be with their fresh made salsas in the refrigerated section.

    I know it as a salsa dona from Taco Deli and Fresas. It should be distributed liberally around Austin during cedar season.

    They sell it at HEB. It comes in a bag with a twist open spout.

    I’ve been making my own at home with poblanos and Serranos. I broil garlic and the peppers then blend with salt and canola oil. It’s so good!! For store bought I like the TJs one someone recommends above though it does have a tiny bit of sugar. It doesn’t taste sweet though. The brand MNMLST makes one that looks good, they sell it at central market.

    Good shit but I’m not down with emulsified sauces anymore, even Mayo and hollandaise. We’re not supposed be downing that much oil or fat, man. Full stop. Emulsify it in a robot coupe or vita mix with a glob of yogurt or even water, your tract will thank you

    Shit even lecithin or mustard will emulsify stuff without all that oil

  8. Basically just jalapeños and grease. Onions, cilantro, maybe extra serranos (salsa enojada). No real recipe, just an emulsion. Delicious. Bring a straw, or eat it with a spoon.

    Whole Foods sells Taco Deli’s version of it in the refrigerated section. It’s wonderful.

  10. If you’re north/east, we buy tubs of it from Tortilleria Rio Grande on Braker. A+ Tortillas there too.

    Best in things that aren’t already oily/greasy.
    Can be made at home with any chile, garlic, salt, and oil. The chiles are the emulsifier.
    The chiles are usually boiled but you can roast them too, just be sure to remove ALL of the burnt skin.
    If you are swimming in NM green chilies, try making some with them.
