Stove Top Stuffing Chicken Casserole with Roasted Broccoli
Ingredients:
1 box Stove Top Stuffing, chicken flavored
Water and Butter per stuffing directions
2 cups chicken, cooked and chopped
1/2 cup of sour cream
1/2 cup of mayo
1 can cream of chicken soup
Dash of garlic salt to taste
Dash cracked black pepper to taste
2 cups fresh broccoli florets, cut into bite-sized pieces (frozen broccoli can also be used- just thaw before preparing)
2-3 tablespoons olive oil
Salt and pepper to taste
1 cup Colby cheese, shredded
Directions:
1. In a large mixing bowl, toss broccoli with olive oil and salt and pepper. Set aside.
2. In a medium saucepan, prepare stuffing per package directions. Set aside to cool. (TIP: It’s important to use all the butter so the stuffing stays moist while baking.)
3. In a large saucepan, heat the chicken, cream of chicken soup, sour cream, mayo, garlic salt, and cracked black pepper over medium heat. Stir until combined and thoroughly heated.
4. Transfer the chicken mixture into a greased 13×9″ casserole dish. Spread evenly. Sprinkle the Colby cheese on top of the chicken mixture. Transfer the stuffing to the casserole dish. Use your fingers to break up the stuffing and spread out evenly.
5. Place the broccoli pieces around the outer edge of the casserole dish with the floret side up.
6. Bake uncovered in a 350-degree oven for 30 to 40 minutes or until broccoli is lightly roasted. Serve immediately!
