    Any recommendations for a gluten free option for the Mirin? I haven’t been able to find GF mirin & usually they say to sub it for rice vinegar, do u know if that will work in place of it? Thank so much!

  5. Okay, so I made this and here's how it went:

    I don't have much experience with skin on chicken. While I was cooking, I went on autopilot and put oil in the pan to cook chicken like I normally would. Looking back at the video, I realize that while I understood that the fat has to render, he didn't specifically say not to put anything in there and I went on autopilot. I think it was because of this that the skin didn't get crispy. So that didn't work out. After it was fully cooked, we ended up just sort of taking the skin off because it was rather floppy. Whoops. I did like the experience of trimming the fat and taking the bone out though, which is something I had never done before.

    Despite this, the teriyaki sauce was absolutely amazing. I tried it before adding any sugar and I liked that option, although it didn't adding sugar like he did in the end. Worked out beautifully. Would highly recommend that!
