I recently found out my great great grandmother was the (1918) Orange county home demonstration agent for food preservation and canning.
I grew up seeing modern demonstration agents at the state fair, and always admired their beautiful canning efforts. I was not aware of the historic significance.
It seems to me we are now in need of more agents to teach proper canning methods. I am appalled by “rebel” canning. It seems tied to some weird anti-science BS. Hand crafted bespoke neurotoxins anyone?
I looked into the history of home demonstration agents, and apparently they often acted as makeshift nurses, especially during the 1918 pandemic.
