  1. I smoked some bone in pork chops with a heavy dose of hickory smoke, reverse seared in garlic butter and finished with this sauce and it was amazing. It balanced the hard bite of the smoke quite perfectly

  2. Balsamic is too sweet for me. I tried making a pan sauce for your wrapped pork tenderloin and it was just too much. I used more broth and some dry mustard, and less balsamic vinegar. But hey, that’s just me cooking.

  3. So…went on vacation. Realized I left 3/4 bottle open(no cork). I’m just going to toss everything in and cook it down to syrup.

    What can go wrong! Except my next date night with my wife!

  4. Dear Chef… PLEASE change your recipes to use WHITE PEPPER.
    In many people BLACK PEPPER is a trigger for MIGRAINES… I've stooped using black pepper and replaced it with the White.. No migraine from pepper in my food.. And the seriously wonderful up side besides the migraine thing is you only need about a 1/3 rd as much.
    Please try it and see. I've told friends and relatives about this and they are also seeing diminished number of migraines… When offering recipes please have an alternative for those with food allergies or medical needs…. Like less sodium for those suffering from HIGH BLOOD PRESSURE, or Diabetes.

  6. Unsalted butter is a better quality cream.
    They use salt in the cream as a preservative and can use lesser quality cream.
