I told him I wasn’t sure these were ok to consume but he insisted that since the seal was still good it was fine. I actually don’t know much about what a rusted lid might do in terms of a health threat so I ate some yesterday and I felt fine, but I dunno it doesn’t seem great to me. Am I being paranoid or should I toss them?

The ring itself doesn’t matter since it doesn’t come in contact with the food.
As long as the seal was solid and the actual lid didn’t look bad, then i would eat it
it’s fine. he should use new lids every time. the rust won’t hurt you though.
The outer lid doesn’t matter, but the rust on the sealed lid does. Those are one-time use, and that means it’s been reused. I would pass and teach your dad to use new lids. Also ask him how he canned them. His practice is probably off if his lids are that bad.
