  2. I tend to have issues cooking eggplant right. Do you soak them in salt water before cooking, and if for how long?

    your Ratatouille, does your Nona bottle it?
    we make it in large batches, but we do it in a saucepan, and as you say it's a bit watery, How does Nona keep it or does she just make what she needs?

  4. I made it for dinner tonight and served it on some penne pasta and my family loved it! I didn't had fresh herbs so I used about a tsp of dried Herbs de Provence for each tray and it still turned out delicious. It's a fantastic way to eat lots of veggies without it being too filling.

  5. whenever Ive roasted in a high heat with olive oil on top, the oil vaporises and I spend the rest of the weekend cleaning my oven. Best to cover with another sheet of foil.
