My Second Favorite Pasta Salad – The Caprese Pasta Salad

Pasta Salad? Yes, please. Any day of the week, any week of the year. I’ll eat it for breakfast, lunch, or dinner. And usually it’s my classic summer pasta salad.

This isn’t that. This Caprese Pasta Salad is my second favorite, and works great when you want something just a little bit lighter but just as tasty.

Dressing Ingredients

¼ cup Olive Oil
2 TBSP White Wine Vinegar
½ tsp Dried Oregano
1 tsp Dried Basil
½ tsp Spicy Brown Mustard
¼ tsp Kosher Salt
¼ tsp Coarsely Ground Black Pepper
2 tsp Minced Garlic
2 shakes Tabasco Sauce

Caprese Pasta Salad Ingredients

1 lb Small Pasta Shells
¼ cup Red Onion Chopped
10 Basil Leaves
3 TBSP Sun Dried Tomato
½ cup Parmesan Cheese
2 small Tomatoes Thinly Sliced
8 oz Mozzarella Cheese
Balsamic Glaze (or Balsamic Vinegar)
Basil Leaves To Garnish
