Makes almost 2 cups:
1/2 cup tahini paste
​1 clove garlic
​1/4 – 1/3 cup lemon juice (freshly squeezed)
2-3 heaping tablespoons plain yogurt (optional)
warm water
fresh parsley
​pinch of ground sumac (optional)
salt, to taste

​Stir the tahini paste well before measuring it. The oil tends to rise to the top of the container. 

​Place the tahini paste in a mixing bowl along with the lemon juice, 2 tablespoons yogurt, 1/4 teaspoon salt and mix well.

​The mixture will begin to thicken and sieze up. Don’t worry!

​Grate the garlic into the sauce and add enough warm water to mix it into a smooth paste. Add as much water as you like to achieve your desired consistency. Thick tahini sauce is great if using as a sandwich spread. Thinner tahini sauce is great for drizzling over foods or as a dressing.

​When desired consistency is reached, taste for seasoning. Add more lemon juice and/or salt.

​Garnish with finely chopped fresh parsley. Sprinkle some sumac over the sauce and serve.

  1. So happy you posted this recipe. I tell by the ingredients that this is the tahini sauce recipe it been looking for. I went to a Turkish restaurant in Manhattan years ago and have been trying to replicate their tahini sauce since to no avail. Now I know what I was doing wrong. Thank you once again!

  2. I think I've only used tahini sauce on falafels. My parents use it on fish too. Didn't realize it's good on chicken. We're Lebanese, but my parents been in Montreal for 75 years so don't know new recipes on where to use tahini sauces lol

  4. This looks so good and healthy! One tip my boyfriend's Turkish mom gave me is to store the tahini bottle upside down (make sure the lid is on tight!). When you're ready to use it just turn it right side up. This prevents the bottom of the tahini from getting so thick and you won't have issues with the oil separating!

  8. Your Tahini sauce is too much watery ! Sorry Madam , this is not the way to do tahini sauce ! I will invite you to learn from Syrian fellows who can do the tahini sauce the perfect tasty way !
