My Presto has a dial and a 15 lb weight. I want to can sliced apples. I’m just over 2000 feet. Which direction do I use? 10 lbs for 8 minutes or 7 lbs for 8 minutes? Not that it matters with this, but I will be using very light syrup.

    The less pressure you can safely lose, the better the texture. But the other thing to consider is using the dial means you have to monitor visually. Using the weighted gauge means you can just listen to ensure pressure is maintained. Less of an issue when processing for only 8 minutes but helpful if doing something that requires an hour+ processing time

    if you haven’t had your dial checked this year to make sure it’s accurate, go with the weighted gauge
