    It’s been a while since I last made kimchi! The first batch lasted ages and then just when I was starting to run out, my best friend’s mom gifted me with two massive containers full of her homemade kimchi.

    When that ran out, I bought some at my local market and was so disappointed. It wasn’t good at all. So here I am with batch #2.

    It took me half the time it did last time for a couple of reasons. There was a lot less terrified flailing, for one thing, and for another, I finally learned how to julienne vegetables properly. I was so much more organized this time, too.

    Looking back, my first attempt was pure chaos.😅

    I can’t wait until the kimchi it ferments! Sour kimchi is the best!
