This Pesto Potato Salad is a delicious alternative to your typical mayonnaise filled Potato Salad – Not that I don’t love that kind as well! This delicious, fresh recipe is perfect for a weekend summer barbecues or a weeknight dinner side dish. The basil in the pesto adds fabulous flavors that leaves you coming back for second and third helpings!

Ingredients:
Red Baby Potatoes
Red Pepper (1/2 chopped)
Yellow Pepper (1/2 chopped)
Red Onion (1/2 chopped)
Chopped Scallion
1 Cup – 1 ½ Cup of Pesto
1 Lemon to Squeeze
Pepper
Parsley
¼ Cup Red Wine Vinegar
Table spoon of Sour Cream
Microwave Sliced or Quartered Baby Red Potatoes for about 10 minutes with olive oil, salt, and pepper.
Chop all ingredients and mix together in large bowl.
Add fresh squeezed lemon juice.
Finish with a dollop of sour cream and fresh scallions.
