Pineapple Upside-Down Cake with Brown Butter and Rum
Serves 8
PINEAPPLE LAYER
½ cup packed light brown sugar
¼ cup dark rum
Pinch of kosher salt
½ stick unsalted butter
8 fresh cored and peeled pineapple rings, sliced ½-inch thick
CAKE
1½ sticks unsalted butter
1⅔ cups all-purpose flour (225g)
1¼ teaspoons baking powder
1¼ teaspoons Diamond Crystal kosher salt or ¾ teaspoons Morton kosher salt
¾ teaspoon ground cinnamon
½ teaspoon baking soda
¾ cup sour cream, at room temperature
3 tablespoons dark rum
2 teaspoons vanilla extract
¾ cup packed light brown sugar
2 large eggs, at room temperature

I was just thinking about how amazing the people behind the scenes are and how supportive they are of Claire! Such a vast difference in the way Claire felt on gourmet makes to this!

I have a trouble shooting question! I tried making this for my boyfriend's birthday, but for the life of me I could not get the brown sugar and the brown butter to cream together. The brown butter never solidified, even after leaving it to cool for an hour, and everytime I tried it would just come out unincorporated, dense and soupy. I made brown butter 3 times but every time it wouldn't solidify? I realized after the fact that I was also using regular brown sugar instead of light, but my issue seemed more with getting my brown butter to cool? Someone please tell me where I went wrong lmao. 🙏

I am excited to try this recipe! I just got all my ingredients from the grocery store. But, I live in Europe and when things are measured in cups, it makes the recipe a little harder to follow. e.g. our butter is measured in grams on the package instead of cups in north America. Maybe in the future you could include the gram equivalent somewhere in the recipe? 🙂

I made this recipe for my grandfather’s 86th birthday party. It’s the best pineapple upside cake I’ve ever had. The rum really added a nice flavor. It was a big hit and my grandfather really enjoyed it. Will make this again!
