Sayadeieh & Tahini Salad

Marinate the Fish:
• Sea Bass filets marinated in lemon juice, salt, pepper, and cumin. Marinate for 2-3 hours

Prepare the batter:
• Flour, egg wash, and breadcrumbs

Fry the fish:
• Heat oil over medium high heat then fry the fish 3 minutes on each side

Prepare the rice:
• Thinly slice 2 onions
• Heat 2 tbsp. olive oil with 5 cardamom pods and 5 mistika (mastic gum)
• Sautee the onions until almost caramelized
• Add 2 tsps. salt, 1/2 tsp. black pepper, 1 tsp. Turmeric, 1tsp ground Cardamom, 1tsp Cumin
• Add 2 cups hot water and bring to a boil
• Add 1½ cups Basmati rice
• Bring to a boil, then reduce heat and simmer for 15 minutes.

Tahini Salad:
• (Small bowl) Mix 2 Tbsp. Tahini paste with 1 Tbsp. water, then add salt and lemon juice. Keep adding lemon juice and mixing until Tahini turns light in color. (Optional: one small minced garlic clove)
• Add diced tomatoes, cucumbers, and parsley.
• Optional: You could only use the parsley with the Tahini Sauce
