1-1/2 (more or less) cups quinoa
2tsp veg stock powder
((PSA – adding olives to this dish makes it 1000x better! unfortunately I had none on hand, but please do try. also add a drizzle of olive oil if you want))

  3. I make this dish and love it! Although I make a couple of differences, I add in mushrooms when roasting and chop up fresh tomatoes into it. Also I have never used balsamic vinegar and lemon juice. I might just make your recipe tonight for my dinner!!!
