  1. At first when you put in just the meat, I was like "oh hell naw, no roux?!"

    But then you got the roux going with some trinity and spice and everything looked so damn good!!

    Mad props for not forgetting the bay leaves. I don't use filet powder in mine, but I thicken my gumbo with okra (boiled until they fall apart and thicken). I use canned okra because they melt into the gumbo better.

    Question: that didn't look like instant roux, more like a dark roux paste. Is there a name brand? Or did you make it yourself?

  3. I would suggest adding the shrimp last and boiling down the heads and peels for some broth

  5. I do my gumbo with the beef and chicken broth but I love to add at least 2 black Guinness beers. This was from a man from New Orleans. Shrimp,chicken and smoked sausage.
