I found a [instructions](https://detoxinista.com/millet-veggie-burgers/) to make veggie burgers to help me use a bunch of extra millet. Unfortunately I ended up with a bowl of millet (soaked and simmered) and sauteed, diced veggies that won’t stick together to form a patty. Can anyone suggest a way to get this stuff to stay together as a patty? I’m not vegetarian or vegan and so was thinking that maybe adding an egg or 2. Would that work?

    Gluten or starches have a strong ability to keep things together, try adding some overcooked rice or rice flour to your recipe

    Aqua faba – chickpea beans juice is an excellent binder for them and get a ring mold to mold them into patty shape and push em down really hard and let them chill before cooking. Should help bind and keep em together

    That does sound like a pretty crumbly mixture. If you can eat eggs, you might want to try adding a couple of eggs in. Some mashed cooked beans or lentils would also help bind things together, besides balancing out the nutritional profile a little more. You might also consider subbing in some chickpea flour instead. It’s excellent for binding, and gets used in place of egg for those purposes in some Indian recipes.

    Personally, I might be tempted to try several of the above in combination, looking at the recipe with some experience making assorted veggie patties.

    Burger press patty maker. Pack it tight, use parchment paper to handle it easier. Put in pan and don’t move it for 5 mins, flip. Don’t poke and prod, fidgeting with the food while you cook.

    If you need more of a binder, add a “flax egg” (1 tbs ground flax, 2 1/2 tbs warm water, let set for 10 mins)

    I make quinoa patties and they NEED cheese, breadcrumbs, and eggs to stay together.

    Eggs are a great binder. You might also consider putting in some breadcrumbs, crushed crackers, finely chopped fresh bread, a flax egg, or some blended oats in there as well. Some cheese might help bind things too! You can also see if replaces part of the millet with rice to see if that helps.

    I also form the patties between two pieces of plastic wrap, sometimes with a patty shaper and sometimes freeform.

    (Vegetarians often eat eggs and cheese, btw).

    Use ground beef. It helps to hold the shape.
