Hi folks,

I’m looking for a tested safe recipe for mixed pickles. Specifically I’m looking to make muraturi (Romanian mixed pickles), which are all of the extra summer veggies put into an absolutely massive jar. Unfortunately all of the traditional recipes seem super unsafe to me (http://ioanaskitchen.blogspot.com/2013/08/romanian-pickled-vegetables-muraturi.html?m=1).

I found one USDA recipe that is somewhat close but not exactly what I’m looking for –

any thoughts on the following?

1) part of the appeal is the massive jar, is there any hope of finding a gallon+ safe recipe?

2) I know substitutions of the same volume are okay if they are lower ph. Could I start with a tested safe cabbage only recipe and then substitute down for other vegetables? I’m still iffy about volume vs weight for substitutions

3) is there any way to do this unsealed like the traditional method? I’m assuming probably not
